Hardening (Quenching and tempering)
In hardening, the product is not cooled by air, but it is quenched in for example water or oil (Quenching / Hardening).
It is a heat treatment used to achieve a high degree of hardness or strength in the steel. It consists of austenitizing, quenching (or scaring) and tempering (or annealing). This provides a glorified martensitic or bainite structure.
The mechanical material properties change. The chemical properties do not, however.
